SSIM

SSIM compares two images and scores how similar they are, so a big drop flags that something on the shelf moved or sold out. It is sensitive to compression and lighting noise, which limits how reliably it catches real change.

For engineers: structural similarity metric over local windows; used here for a change mask between aligned frames, with a fixed recall-to-false-positive ceiling against JPEG and noise.
